In Merricks North on the Mornington Peninsula, a smart, sophisticated and luxurious restaurant, cellar door and hotel, The Jackalope, have wowed since opening their doors late last year.
Set to be an absolute exemplar within the region, property developer Louis Li had a vision to create a uniquely crafted experience, proposing “a conceptual approach to art, design, dining, and storytelling delivering a delicate interplay."
The Jackalope Hotel features 46 boutique rooms, whilst the adjoining Rare Hare, a casual 100-seater restaurant and cellar door, will showcase products produced onsite. Doot Doot Doot will be a headline contemporary 80-seat restaurant featuring a four-course and eight-course degustation menu.
Two eWater Standalone Systems will be used to clean and sanitise the hotel rooms, back-of-house facilities and the dining spaces.
