It’s been an interesting period for our clients of late.
Dan Hunter, of Brae, has just won restaurant of the year from The Age Good Food Guide. After his appointment as Head Chef at the Michelin-starred Mugaritz, Dan came back to Australia to helm Dunkeld's Royal Mail Hotel. Under Dan's leadership the Royal Mail Hotel earned a Three-Hat status and established his first intensive on-site kitchen garden program. A vocal advocate on sustainable dining, Dan works with a heavy emphasis on utilizing the surrounding regional produce. Brae is an encapsulation of Dan's passion and vision. Founded by Dan and his partner, Julianne Bagnato, Brae is located on 30 acres and the site features an immersive organic vegetable and fruit garden which truly embodies a food-to-plate philosophy.
Shannon Bennett's Vue de Monde, was awarded three hat status.
